¼ cup of mixed chopped dried fruit (such as apple, apricot, cranberries)
2 Tbsp. of chopped walnuts
2 Tbsp. of roasted pumpkin seeds
2 Tbsp. of mini chocolate chips
Directions
Combine the ingredients for the peanut butter base; stir until smooth.
Place oat mixture ingredients in a large bowl; stir.
Pour peanut butter base over oat mixture; stir thoroughly.
Transfer mixture to a silicone loaf pan or a parchment-lined loaf pan. Press down hard with the back of a spatula to firmly pack the mixture into the pan.
Chill for at least 4 hours, then cut into 12 bars.
Store bars in a sealed container in the refrigerator.
