Ingredients
Hummus
2 tsp. of
Carlson The Very Finest Fish Oil
, lemon or
Carlson Cod Liver Oil
, lemon (adults or kids)
¼ cup of prepared garlic hummus
¼ teaspoon of dried oregano
pinch of dried crushed red pepper
Flatbreads
1 tsp. of olive oil
2 individual flatbreads (such as naan or pita bread)
salt and pepper
Toppings
¼ cup of diced cucumber
¼ cup of halved grape tomatoes
¼ cup of sliced Kalamata olives
¼ cup of chopped yellow bell pepper
¼ cup of crumbled feta cheese
2 Tbsp. diced red onion, optional
sprigs of watercress or baby spinach
Directions
Preheat oven to 400° F.
Combine the hummus ingredients. Stir until blended.
Place flatbreads on a baking sheet. Brush each one with olive oil, then sprinkle them with salt and pepper to taste.
Bake flatbreads 5 to 7 minutes or until they are lightly toasted.
Spread 2 tablespoons of the hummus mixture on each flatbread.
Divide the toppings evenly between the two flatbreads.
