Greek Style Personal Pizzas
Serves 2
Hummus
Flatbreads
- 1 tsp. of olive oil
- 2 individual flatbreads (such as naan or pita bread)
- salt and pepper
Toppings
- ¼ cup of diced cucumber
- ¼ cup of halved grape tomatoes
- ¼ cup of sliced Kalamata olives
- ¼ cup of chopped yellow bell pepper
- ¼ cup of crumbled feta cheese
- 2 Tbsp. diced red onion, optional
- sprigs of watercress or baby spinach
- Preheat oven to 400° F.
- Combine the hummus ingredients. Stir until blended.
- Place flatbreads on a baking sheet. Brush each one with olive oil, then sprinkle them with salt and pepper to taste.
- Bake flatbreads 5 to 7 minutes or until they are lightly toasted.
- Spread 2 tablespoons of the hummus mixture on each flatbread.
- Divide the toppings evenly between the two flatbreads.
